Vegan curry

Yummy veggie curry!

What you need:

  • Red Thai curry paste
  • Coconut milk (I’d suggest full fat)
  • 1 onion
  • 3 garlic cloves
  • Olive oil
  • Veggies
    Anything you like – peppers, courgette, aubergine, sweet potato, spinach
  • Cashew nuts
  • Jasmine rice

What to do:

  • Chop onion and garlic and fry in olive oil
  • After a couple of mins, add the red Thai curry paste
  • Add other chopped veggies to mix and stir in
    (If using sweet potato then put in oven about 40 mins before this point so it’s already soft when added to mix)
  • Add coconut milk and stir in
  • Put rice on (takes about 12 mins)
  • Let curry mixture simmer
  • Add cashew nuts and spinach for the last 2 mins
  • Enjoy
